Pulled Jackfruit Tacos by Dani Mercieca

If you have tried jackfruit before, you already know this but HOLY MOLY, how good is jackfruit!?!?! It is such a fantastic vegan substitute to pulled chicken, pork or beef. These tacos have the punchy signature Mexican flavours paired with fresh lettuce, cabbage, red onion, lime and creamy avocado. Do yourself a MASSIVE favour and get onto these guys ASAP.

Pulled Jackfruit Tacos
Makes 8-10 tacos | Prep Time 15min | Total Time 30min

INGREDIENTS

1 tbsp extra virgin olive oil
1 brown onion, finely diced
2 cloves garlic, finely diced
2 x 400g tin young jackfruit
2 tbsp tomato paste
3 tsp SPICETUB Mexican Beef Bowl Mix
400g tin diced tomatoes
1⁄2 cup vegetable stock
3⁄4 cup corn kernels
1⁄4 cup jalapeños (optional but recommended), finely diced
3⁄4 cup black beans
Juice of 1⁄2 lime
8-10 tortillas
2 cups mixed lettuce leaves
1 avocado, sliced
1⁄2 red onion, thinly sliced
1/3 cup red cabbage, thinly sliced

To serve (optional but recommended)

Lime wedges Sriracha mayo

METHOD

Heat the olive oil in a medium size pot and sauté the onion and garlic, approx. 2min. Meanwhile, drain the jackfruit and cut on the diagonal from the core (pointy end) into slices. Using a fork, push the pieces of the jackfruit flat.
Add the tomato paste and SPICETUB Mexican Beef Bowl Mix to the onion & garlic and combine. Cook for 1 minute. Add the pulled jackfruit, diced tomatoes and vegetable stock and combine. Add the corn, jalapeños, black beans and lime juice and combine. Simmer on low for 10 minutes with the lid on, stirring occasionally. Stand for 2 minutes with the lid on before serving.
Serve pulled jackfruit in warm tortillas with lettuce, avocado, red onion and red cabbage and a drizzle of sriracha chilli mayo OR you can top with your favourite taco toppings!
