Minestrone Soup in Minutes by Erin Jones
Quick and easy, veg filled, comforting family favourite? Yep, you have clicked your way right to the heart of that! Full of flavour, bold and packed with chunky goodness - This is not only the minestrone that is easy and quick but a winner for the whole household.
Serves 4 | Prep Time 20min | Total Time 40min
INGREDIENTS
1 tbsp extra virgin olive oil
1⁄2 onion, finely diced
3 celery stalks, cubed
1 carrot, cubed
1 zucchini, cubed
1 potato, cubed
1 tbsp tomato paste
1 tbsp SPICETUB Veggie Master
1 vegetable stock cube
400g tin diced tomatoes
2 serves pasta of choice
400g tin beans (4 bean mix/kidney beans/cannellini beans), drained & rinsed
Handful fresh parsley
Parmesan cheese, grated
METHOD
Add the olive oil to a large saucepan over a medium heat. Add the diced onion and sauté for 5 minutes or until soft. Add the celery, carrot, zucchini and potato and brown for 2 minutes. Then add the tomato paste and cook for a further 2 minutes. Add the SPICETUB Veggie Master, stock cube, canned tomatoes and 4 cups of water. Let the soup simmer for about 20 minutes or until the vegetables are soft. While the soup is simmering, cook the pasta in a pot of boiling water and drain. When the veggies are soft, add the tin of mix beans and drained pasta to the saucepan. Add a handful of chopped parsley and serve with a sprinkle of parmesan or vegan cheese.
