Mexican Beans by Ash Homer

Probably the shortest method description and easiest way to prepare a dish. We loooove those one pot wonders and this one comes with the biggest flavour punch you have ever tasted! So delicious, vegan and did we mention: Super easy and quick to make?

Serves 2 as a main or 4 sides | Prep Time 5min | Total Time 35min

INGREDIENTS

1⁄2 brown onion, finely diced
400g tin Mexican mix beans, drained & rinsed
OR
400g four bean mix, drained & rinsed
400g tin crushed tomatoes
1 tsp garlic powder
1 tbsp SPICETUB Mexican Beef Bowl Mix
2 tbsp chipotle sauce (optional, but highly recommended!)

METHOD

Place all ingredients in a medium saucepan over a low heat and mix well.
Simmer for 30 minutes, or until the sauce thickens, stirring occasionally.
Serve with any Mexican style dish, on toast, with eggs, as a dip – the options are endless!
