Chilli Scrambled Turmeric Tofu & Greens by Katie-Rose Campbell
This one is a true kickstarter to your day! Silken tofu is so beautiful to cook with and the flavours of turmeric and some serious chilli kick are just amazing. The greens tie it all together and give you some relief from that cayenne love, seriously amazing! Try it for yourself!
Serves 2 | Prep Time 10min | Total Time 20min
INGREDIENTS
2 tbsp extra virgin olive oil
1 bunch broccolini, roughly chopped
2 cups spinach
300g silken tofu
2 tsp SPICETUB Chilli Scrambled Egg Mix
1 tsp ground turmeric
2 gluten free seeded bagels
OR
4 slices of gluten free seeded bread/loaf
METHOD
Heat 1 tbsp of olive oil in a frying pan and sauté the broccolini and spinach until cooked, set aside.
In a bowl, mash the silken tofu with a fork, then add the SPICETUB Chilli Scrambled Egg Mix, ground turmeric, 1 tbsp of olive oil and combine. Cook the tofu in the frying pan for about 5 minutes until golden. Toast the bagel (or bread) and serve topped with the tofu and greens. Enjoy!
